Devil's Food Chocolate Cake (Shameless Box)

What about a Devil's Food cake with cream cheese frosting?
Think of a super moist chocolate cake: rich and decadent, with a bit of tartness from the cream cheese...
I made this cake for my friends. Everyone loved it and not even a crumb was left after just 10 minutes! I felt so proud of myself since no one realized that I actually used a boxed cake mix for this lol.
I used to only make cakes from scratch. But for a last-minute gift for my friends' birthday(s), I finally decided to give the boxed cake a try. Of course, with some special adjustments of the recipe printed on the box ;)
Now I'm gonna show you how to make a cake out of a boxed mix that tastes EVEN BETTER than a homemade one!
Ingredients
Cake
1. 1 box Devil's Food cake mix (I used Ducan Hines')
2. 2 cups melted butter (unsalted)
3. 3 large eggs
4. 1 cup full-fat milk
5. 3 tablespoons mayonnaise
6. 1/4 cup coffee
Frosting
1. 1 cup whipped cream cheese (or regular cream cheese)
2. 2-4 tablespoons of milk (adjust to desired thickness)
3. 1/4 cup granulated sugar (adjust to taste)
4. 1 tablespoon unsalted butter
Instructions
1. Preheat the oven to 350 F.
2. In a large mixing bowl, whisk together all the wet ingredient (2-6).
3. Use a spatula, gradually mix in the boxed cake until a batter consistency forms with no big lumps.
4. Grease and line your cake pan, then pour the batter in. Bake for 30-35 minutes.
5. Once chilled, divide into 3 layers.
6. For the frosting, simply whisk all four ingredients together and lay between cake slices.
7. Decorate!

I actually found it really convenient especially because I didn't have a kitchen scale on my hand, and it was fun to play with variations. Notes
- This recipe generates a thick 6-inch round cake and a dozen mini muffins.
- If you want a thicker frosting, use 2 tablespoons of milk only and whisk with a hand mixer until light and fluffy.
- I didn't have a hand mixer when I was making this so it would be hard for me to whisk a thick frosting. I used around 4 tablespoons of milk just because it would make it easier to combine. You will get a runnier consistency, which is also nice because it can create a dripping effect on your cake.
- Don't get mad when you see the mayo on my ingredient list! Mayonnaise is simply made from egg yolk, oil, and acid, which would add more fat (aka. creaminess) to the cake and make it super moist, fluffy, and flavorful.

These babies are incredible! They were baked more thoroughly than the big one and thus has a roasted aroma reminiscent of chocolate cookies. |
